Mini Red Velvet Oreo Cheesecake

I made these mostly because I wanted to feel fancy. I mean "Red Velvet" just sounds decadent, don't you think? On the plus side, they turned out wonderfully. The Oreo crust was just the right amount of crunchy and the cheescake had just the right amount cheesecakeyness. I would most definitely make these again!

For the Crust:
13 Oreos
1 & 1/2 tsp butter, melted

For the Cheesecake:
1/3 cup white sugar
1/4 cup brown sugar
1 package (8 oz) cream cheese at room temp
1/2 tbsp sour cream
1 tsp vanilla extract
2 tbsp unsweetened cocoa powder
1/2 tsp red food colouring
1 egg, lightly beaten

Topping:
6 crushed Oreos
