Miso Tomato Fritters

Tomato fritters with a twist.

1 cup flour
1 teaspoon baking powder
2 tomatoes
2 tablespoon minced onion
1 tablespoon dried parsley
2 eggs
2 tablespoon white miso
Oil for frying
Combine flour and baking powder. Cut tomatoes into ¼-inch pieces and drain. Add onion and parsley to tomatoes, then mix with flour and baking powder. Beat eggs and mix with miso. Add to flour-tomato mixture. Heat ¼-inch deep oil in a pan. Drop a tablespoon of fritter at a time, flatten with the back of a spoon. Put as many as the pot allows without crowding. Work in batches. Fry 1 minute per side or until golden.
