MISS SUE'S ZUCCHINI BREAD

This is a recipe from a very good friend of mine who agreed to share it with me and of course, all of you. Miss Sue is a preschool teacher and loved by her kids and parents too. In the summer, there is so much zucchini (especially if you grow it in your garden) that I'm always looking for new ways to use it. This is similar to banana bread in texture and consistency, but not as banana-y. In this version, I've left out the raisins...

2 1/2 cups zucchini
3 eggs
1 cup vegetable oil
1 3/4 cups white sugar
2 tsp vanilla
1/2 tsp salt
3 cups flout
1.2 tsp baking soda
1 tsp baking powder
3 tsp cinnamon
1/2 cup raisins (optional, if you think they're gross)
1/2 cup walnuts
...or 1 cup chocolate chips
-peel and grate zucchini coarsly -in a bowl, beat eggs until frothy -add oil, sugar, vanilla and grated zucchini and mix well -in a separate bowl, mix all dry ingredients -next, combine wet and dry...
