Mocha Chocolate Chip Walnut Muffins

These muffins are absolutely delicious! They are easy to whip up, and even easier going down. I could put away 2-3 at a sitting with a cold glass of milk. With a touch of coffee and cocoa, chocolate chips and walnuts, these muffins are sure to be a hit. I have been making these for over 25 years, and never tire of them. I think you will be pleased.

1 stick butter, room temp 1/3 cup warm water, mixed with
3/4 cup packed brown sugar 2 tbsp. instant coffee
1 tsp cocoa 2 tsp vanilla
2 eggs 1/2 tsp salt
1 1/2 tsp baking powder 1 3/4 cup flour
1 cup chocolate chips 1/2 cup chopped walnuts

1 cup chocolate chips 1/2 cup chopped walnuts
Cream butter, sugar and cocoa. Whisk the instant coffee with the warm water in a small bowl. Gradually add the diluted coffee, eggs and vanilla, scraping the bowl a few times with a rubber spatula. Add eggs and beat well. Mix flour and baking powder, then add to the batter until well mixed. Stir in chocolate chips and walnuts. Fill 12 paper muffin cups or a 12 muffin tin sprayed with Pam. This recipe will make exactly 12 muffins. Bake at 350 for 20 minutes, or until tops of muffins just start to brown. Remove from oven and immediately take muffins from tin and cool on a rack.
