Moist and Crunchy Pineapple Upside Down Cake

This is an old fashioned upside down pineapple cake made in a heavy iron skillet with a very moist middle and a sweet outer crunchy crust that is delicious just like the olden days!

1 yellow cake mix
1/2 c butter
2c packed brown sugar
1/2 cup whole pecans
1 20 oz. can whole pineapples reserving juice
3 eggs sepparated
1 jar maraschino cherries
1 banana mashed
1c flaked coconut
