Breakfast is a big deal in Mexico. It is one of the bigger meals of the day and as a result there are many delicious recipes that people make to add some variety to this important meal. Molletes are a delicious breakfast item that combines Chorizo, Bread, and Cheese. There are many different ways that they can be made, but this version is one of my favorites.
