Chocolatey, gooey, goodness... chocolate lava cakes pair perfectly with a dollop of whip cream (or scoop of vanilla ice cream) and a few berries. Make 6 "muffins" or 4 ramekins. Ramekins make the perfect, average size, 1 "muffin" makes a great light dessert, and 2 "muffins" are for if you're feeling a little naughty. 4 squares semi-sweet baking chocolate or 2/3 cup semi-sweet chocolate chips
½ cup butter
1 cup powdered sugar
2 whole eggs
2 whole egg yolks
6 Tbsp flour
1) Preheat oven to 425 degrees 2) Grease muffin tin or ramekins 3) Microwave chocolate and butter in large bowl on high for about 1 minute - until it is melted and able to be stirred smooth 4) Stir in sugar until well combined 5) Whisk in eggs and egg yolks 6) Stir in flour. 7) Divide evenly between ramekins or in muffin tin 8) Bake 10-14 minutes until sides are firm and center is soft Let stand 1 minute before serving. Microwave for a few seconds to reheat.
