Mongolian BBQ Seitan

A seitan and mushroom dish served over rice with a delicious Asian BBQ sauce.

1/2 cup hoisin sauce
1/2 cup water
2 tablespoons Bragg's
2 tablespoons agave
1 tablespoon lemon juice
2 tablespoons chili-garlic sauce
2 tablespoons canola oil
3.5 ounces shiitake mushrooms, stemmed and sliced
1 box (1.2 pound) seitan, cut into thin strips
2 teaspoons grated fresh ginger
? teaspoon ground cinnamon
? teaspoon ground cloves
4 ounces snow peas, strings removed
2 scallions, trimmed and thinly sliced
1/4 cup chopped fresh cilantro
2 cups cooked rice, for serving
