Also known as beefcakes in our house. No, not that kind. Get your mind outta the gutter! Beefcake is what my husband jokingly refers to how I make meatloaf now-a-days. I use to make it the normal way in a loaf pan, then I happened upon this ingenious idea on Pinterest to use a muffin pan. Yes a muffin pan, and do you know what the best part is? 1-1 1/2 lbs. ground beef
1 large egg
1/2 c bread crumbs
1 small minced onion
Seasoning (I use garlic and onion powder, salt, and pepper)
