1/3 cup Dried mushrooms
2/3 cup Boiling water
1 cup Quinoa
8 oz. Mushrooms, sliced
2 Tbsp. Olive oil
1 Shallot, minced
2 cloves Garlic, minced
Salt and pepper to taste
1 Tbsp. Butter
1 ½ cups Vegetable or chicken stock; low or no sodium
1 Tbsp. Light soy sauce
1 Tbsp. Fresh Tarragon, chopped
