My Mom's Meatloaf

Moist, flavorful meatloaf in the slow cooker OR oven with a tangy, sweet glaze

Feeds a crowd: 4lbs ground beef, 2 eggs, 1 sleeve saltine crackers, crushed, 1 small onion, splash milk, dash salt and freshly ground pepper. For the glaze: 2 tbsp ketchup, 2 tbsp hot pepper jelly, 2 tbsp brown sugar.
Take off your rings and wash your hands, folks, This one takes real elbow grease. Place ground beef in large bowl, add 2 eggs and the sleeve of crushed saltines. Dice the onion finely and add to bowl along with a splash of milk, a dash of sea salt and freshly ground pepper. Mix all together with your hands and form into a loaf. Place in a baking dish OR in slow cooker. Mix together ketchup, hot pepper jelly and brown sugar and add a twist or 2 of freshly ground pepper. Slather over the top of your meatloaf. For oven baking, place baking dish in 375 degree oven for 1 hour or until cooked through. For slow cooking, cook on low for 5-7 hours. Delicious alongside mashed potatoes and sauteed green beans or asparagus!
