My Mother In Law's Amazing Sweet & Sour Pork

This is super easy and tastes EXACTLY the way you want your sweet & sour pork to taste. Not too sweet, not too sour J Just perfect!

1/4 cup vegetable oil
1 egg beaten
2 pork tenderloins cut in 1/2 inch cubes
2 tablespoons cornstarch
1/2 teaspoon salt and pepper, each
1/2 cup chicken stock
1 can pineapple chunks
1/2 onion, chopped
1 green pepper, diced
2 cloves garlic, minced
1 carrot cut in thin strips
2 teaspoons cornstarch
2 teaspoons soy sauce
1/4 cup brown sugar
1/2 cup pineapple juice
1 tablespoon ketchup
1 tablespoon cider vinegar

Heat the oil in a large frying pan.
Roll the meat in the beaten egg and then in the cornstarch mixed with the salt and pepper.
