My Mother's Meatballs

These wonderful meatballs are not something you put over pasta, although you could. They stew in a sauce, and while doing so, you can add peeled carrots and potatoes to round out the dish. The best part about this recipe, aside from it being an absolute winner, is that is only has 7 ingredients!

1 1/2 lbs lean ground beef 1 egg, slightly beaten
1 tsp salt 2 tbsp bacon fat
1 cup bread crumbs 1 can Campbell's tomato soup
1 can Campbell's beef broth 3 each carrots and medium potatoes, peeled and quartered

I love it because it's great for a holiday dinner. Everyone raves and it get devoured in no time. But, it's also perfect for busy weeknights. You can easily assemble this casserole ahead of time and stash it in the fridge until you're ready to eat it. Then just bake it off. 30 minutes and done!
