My Very Favorite Pizza Dough

I have been using this recipe for almost 20 years! Even though I am constantly testing new pizza dough recipes, I always end up coming back to this one because it is consistently delicious.

2 T. yeast
2 c. warm water (about 120 degrees)
2 T. sugar
2 tsp. salt
1/4 c. vegetable or olive oil
1/2 c. oat bran (optional, but it adds extra flavor and fiber)
5-6 c. bread flour (may use all purpose or part whole wheat)
cornmeal, for sprinkling on pizza pans
cooking spray
1. Mix yeast, sugar and warm water. Let stand for about 5 minutes. Add in salt, oil and oat bran (if desired). 2. Mix in 4 1/2 cups of flour. Continue to add additional flour (up to 6 cups) and knead until dough is smooth and elastic--about 6 minutes (I use my KitchenAid with dough hook to mix the dough. The dough should clean the sides of the bowl but stick slightly to the bottom of the bowl). 3. Place in a greased bowl, turning once, cover and allow to rise until doubled in bulk. 4. Prepare 2 large pizza pans (14 inches or larger) by coating them with cooking spray and sprinkling lightly with cornmeal. 5. Punch down dough and roll and stretch to fit to large pizza pans. 6. Top as desired. 7. For a crust that is crispy on the bottom, place pizza on the bottom rack in a cold oven. Set the oven for 500 degrees and bake for about 20 minutes (one pizza at a time). If the oven is already hot when baking the second pizza, watch carefully and bake for only 10-15 minutes.
