No Chicken Tofu & Biscuits

All the flavor of chicken and biscuits without the chicken.

1 (14 oz) extra firm tofu
1 tbsp. vegetable oil
1 cup chopped carrots
1 cup chopped parsnips
1 cup chopped onion
1 cup chopped celery
2 garlic cloves, minced
1 tsp. kosher salt, divided
1/4 cup (30 grams) whole wheat flour
1 1/2 cups vegetable or chicken broth
1 cup almond, soy, coconut or skim milk
1 cup frozen peas
1 cup frozen corn
1 bay leaf
1 tsp. poultry seasoning
1 tsp. thyme
fresh ground black pepper

Biscuit topping:
1 1/4 cups (150 grams) all-purpose, unbleached flour
1 cup (120 grams) whole wheat pastry flour
1 tbsp. baking powder
1/2 tsp. baking soda
1 tsp. kosher salt
4 tbsp. light butter or vegan butter, grated then frozen
1/2 cup club soda or seltzer water
1/4 cup almond, soy, buttermilk or skim milk
