No-Fuss Fruit Cake

You may think you don't like fruit cake. Some of the versions you get from the store are heavy, dry or gluey. This recipe is nothing like that. It will change your mind about fruit cake.

You can add additional spices if you like. A teaspoon of grated ginger or some cardamom would be great additions.

The recipe calls for sherry. So, it only makes sense that that this recipe is perfect with dessert wines!

2 pounds mixed dried fruit
2 cups Almond Milk
2 1/2 cups Almond Meal
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg
1/2 tsp allspice
2 tbsp sherry
  1. In a bowl, place the dried fruit and add the almond milk. Let it soak for about 24 hours in the fridge.
