No Peanut Butter No-Bake Cookies
An older no-bake cookie version without the peanut butter. Fun to make with the kids & can be changed to any flavor!

1/2 cup real butter (margarine or spreads like Country Crock will not work!)
2 cups sugar
2/3 cup evaporated milk
1/2 tsp. vanilla
1 (3.5 oz) box instant pudding mix (whatever flavor you like)
3 1/2 cups quick oats

In a medium saucepan over medium heat,
melt butter. Continue on medium heat, add in
evaporated milk & sugar. Stirring constantly,
mix until sugar has completely dissolved. Add
in vanilla & bring to a boil. Remain at a boil for 1 - 2
minutes, stirring constantly. Mix in pudding mix
& blend well with wisk. Turn heat to low.
Slowly add quick oats. Blend well.
Spoon onto waxed paper lined cookie sheet
in small, cookie sized piles. Cool in refrigerator
for 15 - 25 minutes. Store in an air-tight container.
Note: Chocolate Fudge & Cheesecake are both especially good!
