My state's version of black-eyed pea dip.

2 (15 ounce) cans black-eyed peas, drained
1 (16 ounce) package frozen corn, thawed
1 (10 ounce) can Ro*Tel tomatoes
2 cups diced green bell peppers
1 cup finely diced fresh jalapeno peppers
1/2 cup chopped red onion
1 (8 ounce) bottle Italian salad dressing
1 (4 ounce) jar diced pimento peppers, drained
In a large bowl, combine all ingredients, stirring gently to combine. Refrigerate overnight, to allow flavors to blend. Serve as a side salad or with tortilla chips for dipping.
