One pot Bacon Braised Lamb Stew! This healthy gluten free Lamb stew is PACKED full of flavor! And I promise it’s easy! Let’s just say the bacon and lamb combo together do wonders. As do the veggie packed nourishment. Great for family dinners, freezer friendly, and paleo friendly.

2 oz uncured bacon strips
2 tbsp tapioca flour (or other gluten free flour/starch of choice)
1½ lbs of lamb or lamb loin (ground or chopped)
½ tsp black pepper
½ sea salt (or to taste)
1 cup chopped onion
½ tsp minced garlic (or about 1 clove)
3½ cup chicken or vegetable stock (gluten free)
½ tsp honey or sugar (optional)
1 cup chopped carrots
1 cup chopped celery
¼ tsp dried thyme
2 cups chopped potato (use sweet potato for paleo option)
¼ cup white wine (omit if paleo)
1 bay leaf
