Open Face Chicken Meatball Subs

One of our favorite meals to have as a treat for a big sporting event are these meatball subs. I usually make them with minced turkey, but decided to try Lori’s Chicken Parmesan Meatballs recipe. I only made the meatballs and didn’t use her portions for sauce and cheese on top of the meatballs. I also made mine about half the size that she did. I used four per sub and froze the rest after cooking. We served these open faced and ate with knives and forks!

1 lb ground chicken
1/2 cup Panko breadcrumbs
1/4 cup onion, finely diced
1 T parsley, finely chopped
1/2 cup shredded parmesan cheese
salt & pepper to taste
1 clove garlic, minced
1 egg, beaten
sub breads rolls
1 sliced onion
1 sliced green bell pepper
1 sliced red bell pepper
2 c pasta sauce of your choice
1 c shredded mozzarella cheese
a sprinkle of parmesan cheese for each sandwich
olive oil for drizzling
2 cloves of garlic
1/2 cup Panko breadcrumbs

Make Lori's Chicken Parmesan Meatballs (I browned mine in a very hot pan first then put the pan straight into the oven for about 15- 20 minutes).
