Open-Faced Caprese Egg Scramble

A perfect brunch scramble inspired by my favorite fresh sandwich.

3 eggs, whole

3 eggs, whites only

1/4 cup 1% milk

salt & pepper, to taste

1 Morningstar breakfast sausage patty (optional)

1 roma tomato, diced

1 teaspoon coconut or extra virgin olive oil

1 Tablespoon pesto

1/3 cup fresh mozzarella, cubed or shredded

2 Pita or Flatbread
