Open Sandwich with Flying Fish Roe, Daikon and Mango

Seafood and bread version of “Tomato and Daikon on Mango Slices.

1 mango
2 tbsp flying fish roe (tobiko)
2 tbsp shredded daikon
2 toast bread
Slice the mango into ¼ to ½ inch thick slices. Remove peel. Use a cookie cutter to cut into favorite shapes (optional). Cut toast bread into 8 small pieces. Trim off the hard edge (optional) Put mango slices on top of the bread. Top with daikon, then tobiko. Note: It’s easier to cut mango first then prepare bread larger than the mango.
