Moist, delicious, and gluten-free! It is possible to get a great tasting, moist muffin using alternative flours and healthy ingredients! This muffin uses coconut flour as it\\\'s alternative flour source but it does not taste like coconut. You just need to try it to see!

3 eggs
1/3 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons vanilla
1 1/2 teaspoons cinnamon
1/2 teaspoon baking powder
3/4 teaspoon baking soda
3 tablespoons applesauce
