Our Version of Panda Express Chow Mein

I think technically this is a “Lo Mein” recipe but we will stick with “Chow Mein” because that is what Panda Express calls it. Either way.. this recipe was a HIT at our house! Pair this with a couple of our other Asian inspired recipes (click HERE) and you can have a full-on family style Chinese take-out night at home for a fraction of the price of going out! **In this recipe you can add a shake or two of sesame oil to the vegetable oil to add a deeper flavor–but don’t overdo it! I am not including it in the recipe because the sesame oil flavoring can become overpowering real quick if you aren’t careful. Plus, I have made it both ways (with and without sesame oil) and they both taste great.

On a warm summer day, there's just nothing better than a chilled sandwich and a cold beverage. Make them ahead if you're entertaining, or whip up the no-cook meal in about 15 minutes. These easy shrimp rolls are a delicious lunch or dinner when served alongside coleslaw, potato chips, hush puppies or pickles!

2 T salted butter
1 lb. peeled and deveined cooked shrimp
1 stalk celery
2 green onions
1/3 c mayonnaise
1 t lemon juice
1 t white vinegar
1 T minced fresh dill
1/4 t Old Bay seasoning
