Oven Roasted Vegetable Platter - A great alternative to grilled vegetables and so much easier. Just 15 minutes of roasting time.

1 pound asparagus, trimmed
1 pound grape tomatoes, halved
12 ounces fresh button mushrooms, quartered
1 large orange bell pepper, seeded, ribs removed and cut into ½ inch strips
1 large yellow bell pepper, seeded, ribs removed and cut into ½ inch strips
1 large red onion, cut into 8 wedges and layers separated
6 tablespoons olive oil
1 teaspoon kosher salt
1 teaspoon pepper

1/2 c light corn syrup

1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
