Over the Top Macaroni and Cheese with Chicken

A dinner to please the whole family. A macaroni and chicken casserole with 3 different cheeses and topped with seasoned bread crumbs.

8 oz. macaroni noodles, cooked and drained (about 2 cups uncooked)
3-4 cups cooked and diced chicken
2 tpsp butter
1/2 cup onion, chopped
2 cups cottage cheese
2 cups shredded cheddar cheese ( I use sharp)
1/2 cup grated parmesan cheese
1/2 tsp dried basil leaves
1 can (10 3/4 oz) Cream of Chicken soup (I use healthy request kind)
Italian seasoned breadcrumbs
Melt butter and saute onions until soft. Remove from heat and add the soup, basil, cottage cheese, cheddar cheese, and parmesan cheese. Set aside. Mix together the noodles and cooked chicken. Pour the soup and cheese mixture over the noodles and combine well. Pour into a greased 9 x 13-inch baking dish. Sprinkle bread crumbs over the top. Bake, covered for 30 min at 350 degrees. Uncover and bake for additional 15-20 minutes or until bubbly.
