Overnight Egg Strata

If you are looking for an easy egg casserole that you can assemble the night before and is different from other egg casseroles you've seen before this is the one for you! I got this recipe from my friend, Nicki (hi, Nicki!) She had adapted it a little bit and I adapted it even more! The base for this strata is toasted english muffins (genius!) Feel free to use any vegetables you like - this is just a suggestion. Enjoy!

1 T. unsalted butter
8 oz. sliced white mushrooms
1/2 bell pepper, diced (I used red)
1/2 onion, diced (I used yellow)
1 t. salt, divided
1/2 t. pepper, divided
2 1/2 english muffins, toasted (I know, it's weird to use a half, just eat the other half!)
2 oz. baby spinach
1 c. shredded cheese (I used skim co/jack)
4 large eggs
1 c. skim milk
1/2 t. dry mustard powder
Melt the butter in a medium skillet over medium heat and add the mushrooms, bell pepper and onion and saute, stirring occasionally, for 10 minutes until most of the liquid has evaporated and the mushrooms...
