This paleo carrot almond cake is super moist from the carrots, has a lovely almond flavour and texture from the use of almond meal and has a lovely hit of spice from the cinnamon and nutmeg.

2 Cups Carrot, grated
3/4 Cup Coconut Sugar
1/2 Cup Coconut Oil, melted
1 Tsp Vanilla Essence
3 Eggs
2 and 1/2 Cups Almond Meal
1 Tsp Cinnamon
