Gluten free, refined sugar free, low carb Coconut Macaroon Cheesecake

Crust:
3/4 cup unsweetened coconut, shredded and toasted
1/4 cup coconut flour
1/2 cup walnuts, chopped fine
4 Tbsp coconut oil
Filling:
2 eggs + 1 egg yolk
1/3 cup pure maple syrup
1 tsp vanilla bean paste
1/4 tsp coconut extract
3 8 oz bricks cream cheese, room temperature
Topping:
2/3 cup unsweetened coconut, shredded and toasted
1 egg white
1/2 tsp vanilla
1/4 cup pure maple syrup
