Pancakes with Blueberries

These pancakes are made with an alternative to buttermilk. I very rarely have buttermilk on hand, but I almost always have greek yogurt! This swap worked out perfectly. You can make these with or without blueberries, but I think they're so much better with them! When I made these, I also didn't have any milk! Instead of using 1/2 cup of milk, I brought 1 tbsp of coffee creamer to a total volume of 1/2 cup with water.

3/4 cup all purpose flour
1/4 cup white whole wheat flour
1 1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp ground cinnamon
1/2 tsp salt
1/2 cup greek yogurt
1/2 cup milk
3 tbsp unsalted butter, melted and cooled slightly
1 egg
nonstick cooking spray
blueberries (optional)
pancake syrup or maple syrup for serving
