2 boneless, skinless chicken breasts
3 button mushrooms, finely chopped
1/4 medium-sized red onion, finely chopped
1/4 cup grated parmesan
1 tsp minced garlic
1 tsp dried rosemary( I didn’t use this)
2 tbsps butter
3 button mushrooms, finely chopped

Fry the mushrooms, onion and garlic in butter until browned.
Transfer to a bowl and add the parmesan.
Preheat oven to 400°
Carefully slice through the chicken to create a flap.
