6 cups water
1 large yellow onion, unpeeled and quartered
4 cloves of garlic, unpeeled and smashed
2 pieces of parmesan rind
1 can white beans, rinsed and drained
4 leaves of kale or Swiss chard, stems removed and chopped into ribbons
1 cup of cooked quinoa (optional)
Salt
Pepper, freshly ground
Parmesan, shredded for garnish
