Pasta and Sausage Two Ways

Hearty pasta bake allows you to stretch your pasta meal for a second time, making it the perfect comfort food.

8 oz. Whole Wheat Pasta
Olive Oil
3 (4oz) sweet turkey Italian Sausage links, casings removed*
2 1/2 cups greens (Arugula or a Mix Arugula & Spinach)
1/2 cup chopped onion
1/2 tsp dried oregano
1/2 tsp crushed red pepper
2 garlic cloves, minced
2 cups canned crushed tomatoes
1/2 tsp. sugar
1/2 tsp black pepper
Take Two
1/2 cup Ricotta or Cottage Cheese
1/4 cup Grated Parmesan Cheese
1/4 tsp dried oregano
1/2 tsp dried basil
1/2 tsp garlic powder
1/ 2 cup Mozzarella Cheese
Olive Oil

Take Two
1/2 cup Ricotta or Cottage Cheese
1/4 cup Grated Parmesan Cheese
1/4 tsp dried oregano
1/2 tsp dried basil
1/2 tsp garlic powder
1/ 2 cup Mozzarella Cheese
1. Bring water to boil in a saucepan. Add pasta and cook 7-9 minutes or until al dente. Drain pasta over a bowl so you can reserve 1 cup cooking liquid.
2. Heat Olive oil in a skillet over medium heat. Add sausage to skillet and cook 5 minutes or until browned. Add 1 cup greens, onion, oregano, crushed red pepper, and garlic. Cook stirring frequently for 2-3 minutes.
3. Add reserved cooking liquid, tomatoes, sugar, and black pepper to pan and bring to a boil. Stir in pasta and cook another 2 minutes heating thoroughly. Add additional 1 1/2 cups greens. Toss into pasta. Serve.
Take Two
In a bowl toss pasta and sausage with parmesan and ricotta/ cottage cheese. Stir well to incorporate throughout the dish. Add additional 1/4 tsp dried oregano, 1/2 tsp dried basil, and 1/2 tsp garlic powder. Mix everything and pour into a ceramic or glass baking dish. Top with mozzarella cheese. Bake at 350 for about 30 minutes or until cheese is melted and pasta is bubbling. Enjoy.
