Fresh peaches made into a delicious peach chutney. Perfect on sandwiches or fish

1 tsp. canola or vegetable oil
1/3 cup onion, minced
1/2 jalapeno, seeds removed and minced
3/4 tsp. kosher salt
2 tsp. grated fresh ginger
2 garlic cloves, minced
1/2 tsp. cinnamon
Pinch of nutmeg
4 peaches, peeled and chopped
1/4 cup light brown sugar
1/4 cup apple cider vinegar
1 tbsp. fresh lemon juice
1/4 cup fresh cilantro, chopped
1/3 cup onion, minced

In a medium saucepan, heat oil over medium high heat. Add onions and jalapeno and saute until just translucent. Stir in salt, ginger, garlic, cinnamon and nutmeg, continuing to stir for 1 minute.
