Peppermint Cheesecake Cake

Peppermint cheesecake sandwiched between two layers of white cake. YUM.

For the cake:
White cake recipe or a boxed white cake

For the Cheesecake:
20 oz cream cheese, room temperature
3/4 C sugar
1/2 TB vanilla extract
1/4 tsp coarse salt
2 large eggs
1/2 C sour cream
1 – 1/2 c. crushed peppermint

For the Frosting:
Pastry Pride
1 – 2 tsp peppermint extract
Crushed peppermint
