Perfect Molasses Cookies

This recipe makes the perfect molasses cookie. Everything you look for in a molasses cookie; soft and chewy with molasses, cinnamon and rolled in sugar. This recipe has never failed me and is requested of me often!

2/3 C. Canola Oil
1/4 C. Molasses
3/4 C. White Sugar
1 Egg
2 C. Flour
2 Teaspoons Baking Soda
2 Teaspoons Cinnamon
1/4 C. Molasses
3/4 C. White Sugar

2 C. Flour
2 Teaspoons Baking Soda
2 Teaspoons Cinnamon
Mix together the oil, molasses, egg and sugar. Stir in the flour, cinnamon, baking soda and salt. Shape into balls and lightly roll in sugar. Place cookies on a baking sheet (I prefer to use parchment paper on my pans to help with clean-up as well as to soak up some excess oil from the cookies). Place 1 inch apart on cookie sheet.
Bake at 350 for 8-10 minutes: the tops should start to crackle and edges be slightly darker than the rest of the cookie. Cool on baking sheet for a few minutes and then move to a cooling rack.
These cookies go great with a glass of milk or hot cup of coffee!
