Pineapple Drop Cookies

Pineapple Drop Cookies are an old-fashioned, wonderful dessert that I think you'll really enjoy! A soft, moist, cake-like cookie subtly flavored with crushed pineapple is frosted with whipped cream cheese icing and topped with chopped macadamia nuts. Perfection!

1 c. shortening
1 tsp. vanilla
1 1/2 c. sugar
3 eggs
1 can (20 oz.) crushed pineapple, undrained
1/2 c. hot water to which 1 tsp. soda has been added
4 c. flour
3/4 tsp. salt
1 tsp. baking powder
1 c. chopped macadamia nuts

Cream Cheese Frosting:
1 block (8 oz.) cream cheese, softened
1/2 c. butter, softened
4 c. powdered sugar
1 tsp. vanilla
