Pink Glazed Easter Doughnuts

Deliciously moist and cakey cinnamon-spiced baked doughnuts glazed with pink icing and sprinkled with crushed Mini Eggs!

For the Doughnuts
2 cups (250g) plain flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
1 large egg
½ cup (100g) light brown sugar
½ cup (120ml) buttermilk
2 tablespoons vegetable oil
1 teaspoon vanilla extract
For the Glaze
1 and ½ cups (187g) icing sugar
3 tablespoons (42g) unsalted butter, melted
1 teaspoon vanilla extract
4 - 5 tablespoons milk
¼ teaspoon pink food colouring (I used Sugarflair Spectral Concentrated Paste in Pink)
1 x 90g bag crushed Cadbury Mini Eggs
