Polenta Bruschetta

A new twist on an old favorite, a less calorie packed version of bruschetta!

1 18 oz pack of polenta (any flavor)
1/2 cup pesto
1/2 cup parmesan cheese
1 tomato
Preheat oven to 350 degrees. Slice the packed polenta into round discs. Spread each disc with a small amount of pesto. Add a tomato and sprinkle cheese on top. Place the discs on a greased baking pan. Then place in the oven for approximately 20 minutes or until the polenta begins to look golden and the cheese is melted, but not browned.
