Pomegranate Cake Frosting

A delicious dye-free cake frosting made with pomegranate juice.

1/2 cup solid vegetable shortening
1/2 cup (1 stick) butter or margarine (softened)
1 teaspoon clear vanilla extract
4 cups sifted confectioners\' sugar
4 cups pomegranate juice (or amount needed to reach desired color and consistency)
1/2 cup granualted sugar
1/4 cup lemon juice
In a large, uncovered saucepan, heat pomegranate juice, granulated sugar, and lemon juice on medium high until the sugar has dissolved and the juice simmers. Reduce heat just enough to maintain a simmer....
