A tasty and filling casserole dish that's perfect served over rice and is a great dish to serve to a large group of friends or family.

2 cans of cream of chicken soup
16 oz. sour cream
4 chicken breasts
2 sticks of margarine or butter
2 sleeves (packs) of Ritz crackers
2 tbsp. of poppyseeds

Boil chicken breasts until done, then shred. Mix sour cream and cream of chicken soup in a 13x9 pyrex dish. Sprinkle poppyseeds into sour cream and cream of chicken soup mixture and stir all together. Mix the shredded chicken into the sour cream/soup/poppyseed mixture. Melt sticks of butter in a microwave safe dish and in the meantime crush the two sleeves of crackers. Once the butter has completely melted, mix the crushed crackers and butter together. Once the butter and crackers are mixed together well, spread evenly on top of chicken mixture. Cover with aluminum foil and bake for 20 minutes on 350. Uncover aluminum foil and bake 10 more minutes. Serve over white rice.
