Porcupine Meatballs and Orange Gravy

The delicious and super-tender meatballs are made with ground beef and rice, then cooked in a pressure cooker in canned tomato soup, making its own gravy. The recipe could not be easier nor could it be more tasty! No wonder this recipe has been in my family for generations! Definitely a winner!

2 pounds lean ground beef
1 cup uncooked white rice (see footnote)
4 tablespoons all-purpose flour
1 small white onion, chopped fine
2 teaspoons salt
1 teaspoon fresh ground pepper
4 cans condensed tomato soup
2 1/2 soup cans of water

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
