Potato and Chorizo Tacos

I grew up in Mexico eating tacos all the time. There are an endless number of combinations that you can make, and you can really use your imagination. One of my all-time favorite tacos is this one - Potato and Chorizo Tacos. The combination is absolutely delicious and there is no way that you will only eat one. They are easy to make too and won't take you all day!

2 medium potatoes, cut into small cubes
Corn Tortillas (As many as necessary)
Pork Chorizo (you can find this at any grocery store, or you can replace it with Italian Sausage if you prefer)
1/2 small onion, finely chopped.
Salt, Garlic Powder, and Pepper to Season.
