Potato Bacon Soup

My daughter gave me her recipe for potato soup and I added to it a little bit. This soup is so good and filling that you will not walk away hungry at all. As a matter of fact you may need a nap like my grandson in the next photo.

5 pounds potatoes peeled, cubed
1 medium yellow onion diced fine
1 pound bacon fried crispy, chopped
1 cup carrots raw, diced
1 cup corn frozen
1 envelope (1.4 ounce) knorrs vegetable recipe mix
18 ounces filled evaporated milk
salt & pepper to taste

In large sauce pan cover diced potatoes and onion with just enough water to cover the top of the potatoes and onions. Boil over medium to high heat until potatoes are soft but still formed and not...
