The Gods are in my favor! Seriously. I’m sold on this dish. What an easy chicken recipe. The wanna-be-chefs in our home are meat and potato freaks. If there’s no meat, it’s not a dinner. And if there’s no mashed potatoes, then life just isn’t as good as it could be. Especially Sister Chef. She’s in love with mashed potatoes and gravy. In fact, we have to mash an extra 10 pounds of potatoes just so she can have ten and eleven helpings. I may be prone to exaggeration. I’ve been known for that. But

4 (1¼ pounds) boneless, skinless chicken breasts
¼ cup Cheddar cheese, shredded
1 cup instant mashed potato flakes
½ teaspoon salt or to taste
¼ teaspoon pepper or to taste
1 teaspoon dried oregano
