This is served at Amish homes around here. It is a nice change of pace from the usual, stuffing, dressing or filling normally served. Funny how different places in the U.S. call it different things.

3/4 cup celery and leaves, chopped
1/2 cup boiling water
1/2 teaspoon salt
1/4 teaspoon pepper, freshly ground
pinch of saffron, optional
2 cups mashed potatoes, left over or freshly prepared
2 eggs beaten
2 cups bread cubes
1 cup milk
butter

Cook the celery in the water with the salt, pepper, parsley and saffron if using, until soft, about 10 minutes. Lightly mix with the potatoes, eggs bread cubes milk, (and dry gravy mix of your choice.) Spoon into a well buttered casserole dish, dot the top with butter and bake in a 350 degree oven for 40 minutes.
I have sometimes added a packet of dry gravy mix to match the meat I am serving at the meal. Just sprinkle over the ingredients and mix it in thoroughly before putting the mixture in the casserole dish.
