Smashed, roasted baby potatoes masquerade as pizza crust in this seriously addictive rendition of loaded potato skins. Easier to make than potato skins and more elegant too!

¼ pound bacon
1½ pounds baby potatoes
7 ounces sharp cheddar cheese, about 1¾ cups
1/8 teaspoon kosher salt
1/8 teaspoon pepper
1 tablespoon fresh chives, chopped

Chive Sour Cream
1 cup/8 ounces sour cream
½ teaspoon kosher salt
1 tablespoon fresh chives, chopped or freeze dried chives
