Prawn and Egg Curry

This dish is one of my sons favourite. He loves prawns and also eggs. This is not too spicy but full of flavour. My mother used to make egg curry for us all the time after school, I thought I would add prawns to make it special. When it’s cold outside its lovely to eat this to warm you up especially for the kids after school.

235g raw peeled prawns
4 eggs
1 medium onion sliced
2 tbsp. ghee
1 tin of tomatoes
1 tbsp. tomato puree
½ cup of water
1 tbsp. garlic and ginger paste
1 tsp ground coriander
1 tsp ground cumin
1 tsp ground cardamom
1 tsp garam masala
1 tsp ground ginger
1 tsp mild chilli powder
1 tsp turmeric
15 curry leaves
1 cup fresh chopped coriander
Salt and pepper to taste
