This is a moist quick bread that everyone is sure to enjoy!

2 tablespoons flaxseed meal
1/3 cup orange juice
1/2 cup sugar
1/2 cup brown sugar
1 cup pumpkin
3 tablespoons coconut oil
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
2/3 cup all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon nutmeg
1/4 teaspoon cloves
3/4 cup chopped walnuts
1 cup cranberries, roughly chopped
1/3 cup orange juice

3 tablespoons coconut oil
1 teaspoon vanilla extract

Heat the oven to 350 degrees. Mix pumpkin and sugars in a medium bowl. Whisk together the flaxseed meal and orange juice.
