Pumpkin Muffins with Cream Cheese Filling

Annie's Eats shared a pumpkin cream cheese muffin recipe a few years ago, and I've made them countless times. They are deliciously sweet and spicy, and have a surprising creamy center. However, they are not by any means healthy. Just last month she provided an updated, lightened-up version, and I immediately wanted to try it. She replaced the all purpose flour with whole wheat flour, subbed out some of the oil for applesauce, and cut back on the sugar. In the filling, she sweetened wit

4oz cream cheese
1 tbsp honey
3/4 cup white whole wheat flour
3/4 cup all purpose flour
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
2 tsp pumpkin pie spice
1/2 tsp salt
1/2 tsp baking soda
2 large eggs
1/2 cup sugar
1/4 cup splenda
1 cup pumpkin puree
1/4 cup vegetable or canola oil
3/8 cup unsweetened applesauce

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
